The Teaching Kitchen in the Jahnstadion sports park is a joint project between Culinary Medicine Deutschland e.V. and the Institute for Nutritional Psychology at the Georg August University in Göttingen. In future, we will be offering a wide range of culinary training courses and events on the topics of health, sustainability, sport and exercise, team building and much more. We want to cook and dine together with you and share scientifically sound information with society in an entertaining but always evidence-based way.

Nachhaltigkeitsbildung für Studierende aller Fachrichtungen: Innovatives Planetary Health Diet-Lehrkonzept mit Kochkurs im Teaching Kitchen
Wie und was wir essen ist nicht nur eine wesentliche Determinante von individueller Gesundheit und Wohlbefinden. Die Art und Weise der Ernährung beeinflusst auch wichtige Nachhaltigkeitsaspekte wie Ressourcenverbrauch, Emission von Treibhausgasen und Biodiversität und sie hat erhebliche Auswirkungen auf Kulturlandschaft und Gesellschaft. Wissenschaft und Politik stehen vor der drängenden Herausforderung, Maßnahmen zu erarbeiten, die der ständig wachsenden Weltbevölkerung auch in Zukunft eine gesundheitsfördernde und sichere Ernährung innerhalb der planetaren Grenzen ermöglichen und soziale Ungleichheiten verringern. Weltweite Referenz für einen entsprechenden Lösungsvorschlag ist die Planetary Health Diet der EAT Lancet Commission (2019)[1]. Die lebensmittelbezogenen Ernährungsempfehlungen der Deutschen Gesellschaft für Ernährung e.V. (DGE) sind dazu grundsätzlich konkordant (2022)[2]. Dies schließt verbleibende Differenzen u.a. bei den Vorgaben für den Milch- und Fleischkonsum ein.

This innovative training program enables participants to develop concepts for school development processes towards sustainable development in the central field of nutrition, which can be part of a plan to implement ESD at their own institution in cooperation with the school's social environment.

Cooking workshops accompanying seminars have the advantage over a traditional nutrition lecture that employees can experience a holistic approach and learn that simple, delicious recipes do not take much time and also taste good. The effect on collegial team building is particularly high when you cook together with colleagues from all status groups in a relaxed but highly communicative environment. The kitchen and the laid table prove ideal as a creative, communication-promoting and coherence-creating place of work and learning. The shared meal strengthens the sense of togetherness as a social campfire and has a positive effect on the company's network of personal relationships.

Nutrition is one of the most important fields of action for ESD. All the Sustainable Development Goals (SDG's) can be mapped through it. Medical, nutritional or educational professions are often mentioned as a trusted source of information for a healthy and sustainable lifestyle. Therefore, these professions have a special importance as multipliers. The "Teaching Kitchen" has proven to be an ideal place for the implementation of the innovative teaching format.

Face-to-face training in the Teaching-Kitchen: Culinary Medicine - optimizing nutritional medicine consulting skills through practical relevance to the real world
Brief description
Culinary Medicine is a new method of translating the findings of nutritional medicine into the lives of patients and clients, thereby optimizing the success of the counseling process. Culinary Medicine combines nutritional medicine, nutritional science, dietetics and psychology with practical culinary skills. The teaching format is an indication-related cooking course with 28 teaching units (TU/LVS) divided into 4 days, which is based on the evidence-based guideline "Nutrition Therapy in Clinic and Practice (LEKuP, Hauner et al. 2019)".
Learning objectives
Participants will be able to recognize and differentiate between the nutritional medical conditions listed in the LEKuP and determine the indications for nutritional therapy. They know the principles of nutritional therapy and their practical implementation in dietetics and culinary arts. These can be applied in practice. The success of the therapy can be assessed.
